Our Portico brand had a significantly higher amount of sodium, over double the competitor’s (470mg vs 120mg).
The two shrimp were relatively equal in sizing and consistency. Portico was slightly smaller at 57.5 per pound (vs. 54.5), which gives Portico 30 more shrimp per 10lb case.
The major difference was in the glazed weight vs net weight. Portico was true net weight after deglazing while the competitor’s lost 17% of their declared (invoiced) weight after deglazing. This made their product actual cost of $4.19 per pound – ($100.50 per case with an actual weight of 24lb). Our price is $4.62 per pound – ($46.18 for 10lb case true net weight)

We were unsuccessful in winning this business worth 25+ cases per week.
Why does our Portico brand have so much more sodium? Is there any way we can get closer to a $4.00lb ($40 case) price?
