Author: Santo Chorizo

Ingredients
- 8 oz Chorizo verde
- 4 oz Black beans
- 4 oz cooked wild rice
- 3 oz Shredded sharp cheddar cheese
- 3 Jalapeno -about 4 inches
- 6 slices of bacon
Directions
- In a sauté pan add the chorizo verde and bring to a light boil then lower the flame and simmer for about 10 minutes stirring as needed.
- Add rinsed black beans (I used canned beans) and the cooked wild rice, stir and cook for about 5 more minutes then add desired amount of shredded cheddar and stir till fully melted
- Using a spoon add the filling mixture into each halved jalapeños, then wrap bacon around and secure with a toothpick.
- Line a baking sheet with foil then arrange jalapenos and bake in a preheated oven at 400°F for about 20 minutes or until bacon is crispy and browned. Serve immediately.
