Ingredients

  • 8 oz Chorizo verde
  • 4 oz Black beans
  • 4 oz cooked wild rice
  • 3 oz Shredded sharp cheddar cheese
  • 3 Jalapeno -about 4 inches
  • 6 slices of bacon

Directions

  1. In a sauté pan add the chorizo verde and bring to a light boil then lower the flame and simmer for about 10 minutes stirring as needed.
  2. Add rinsed black beans (I used canned beans) and the cooked wild rice, stir and cook for about 5 more minutes then add desired amount of shredded cheddar and stir till fully melted
  3. Using a spoon add the filling mixture into each halved jalapeños, then wrap bacon around and secure with a toothpick.
  4. Line a baking sheet with foil then arrange jalapenos and bake in a preheated oven at 400°F for about 20 minutes or until bacon is crispy and browned. Serve immediately.
