Crispy pancetta, sweet hot calabrian chilies, oregano, fresh linguine and rich house-made crème …

Ingredients

  • 3 oz linguine, cooked according to package instructions
  •  1 oz pancetta, diced
  •  1 teaspoon Calabrian Chilies, chopped
  •  2 teaspoons fresh oregano, minced
  •  3 tablespoon white wine
  •  3 oz crab meat
  •  1 tablespoon fresh parsley, chopped
  •  1 tablespoon crème fraiche
  •  1 oz Parmesan cheese, shredded

Directions

  1. Cook linguine according to package instructions and set aside.
  2. Save ½ cup pasta liquid. In a saute pan over medium high heat add pancetta and cook until crisp. Add Calabrian chilies and oregano and saute 1 minute. Deglaze pan with white wine.
  3. Add crab and cook until crab is heated through. Add cooked linguine, parsley, crème fraiche, butter and salt and pepper .
  4. Toss to combine, taste and adjust consistency with a splash of reserved pasta water if needed. Top with shredded Parmesan cheese.
